粉葛鲮鱼汤

材料

kudzu 960 g
dace 240 g
red pearl bean (赤小豆) 60-75 g
tangerine peel ½
water 5000 ml
salt A little

做法


1.Peel, wash kudzu and cut into big pcs. Soak tangerine peel till soft, wash red pearl beans.
2.Scale, Clean and dry dace.
3.Heat 4 tbsp oil in wok, shallow fry till golden brown on both sides. Remove and place in muslin food bag.
4.Bring 5000ml water to the boil, add all ingredients, bring back to the boil then simmer for 2-2½ hours.
5.Add salt to taste before serving.
